This Slow Cooker Creamy Chicken and Wild Rice Soup is one of those easy family dinners you’ll want to make all season long. It’s hearty, creamy, full of tender chicken and vegetables, and the best part is that most of the work happens right in your slow cooker.

I love recipes like this for busy days because you can get everything started in the morning, go about your day, and come home to dinner practically ready.

And instead of reaching for a can of condensed soup, we’re making a simple creamy finish with butter, oat flour, and heavy whipping cream.

It’s cozy comfort food made with simple ingredients your family will love. 🤎

Why You’ll Love This Slow Cooker Chicken and Wild Rice Soup

Easy to make: Most of the ingredients go straight into the slow cooker.

Perfect for fall: Warm, creamy, and hearty enough for a chilly evening.

Family-friendly: Tender chicken, wild rice, carrots, celery, and onion make this a satisfying meal.

Simple ingredients: You don’t need a long list of complicated ingredients to make a delicious homemade soup.

Great leftovers: The soup thickens a little as it sits, making it perfect for lunch the next day.

Ingredients

  • 1½ pounds chicken
  • 1 cup wild rice
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 1 small onion, diced
  • 5 cups chicken broth
  • 1½ teaspoons Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 4 tablespoons butter
  • ¼ cup oat flour (gluten free)
  • 1½ cups heavy whipping cream

How to Make Slow Cooker Creamy Chicken and Wild Rice Soup

1. Add everything to the slow cooker

Add the chicken, wild rice, carrots, celery, onion, chicken broth, Italian seasoning, salt, and pepper to your slow cooker.

Give everything a quick stir and place the lid on.

2. Let the slow cooker do the work

Cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is cooked through and the rice is tender.

3. Shred the chicken

Remove the chicken from the slow cooker and shred it with two forks.

Return the shredded chicken to the soup.

4. Make the creamy mixture

In a small saucepan, melt the butter over medium heat.

Whisk in the oat flour and cook for about 1 minute.

Slowly whisk in the heavy whipping cream until the mixture thickens.

5. Finish the soup

Stir the creamy mixture into the slow cooker.

Let the soup cook for another 15 minutes, allowing everything to come together.

Then grab a bowl, cozy up, and enjoy!

Tips for Making This Soup

Don’t skip the final 15 minutes. This gives the creamy mixture time to blend into the broth and helps bring the soup together.

Make it ahead. This soup is great for meal prep and makes an easy lunch for the next day.

Expect it to thicken. Wild rice and the creamy mixture will continue to absorb some of the liquid as the soup sits. If your leftovers become too thick, add a little extra chicken broth when reheating.

Use certified gluten-free oat flour if needed. If you are preparing this for someone who needs to avoid gluten, make sure the oat flour, chicken broth, wild rice, and all other packaged ingredients are labeled gluten-free.

What to Serve With Creamy Chicken and Wild Rice Soup

This soup is hearty enough to be a meal on its own, but I love serving it with a slice of warm homemade bread.

A simple green salad or roasted vegetables would also make a great side.

Frequently Asked Questions

Can I make this soup ahead of time?

Absolutely! This soup makes great leftovers. Store it in the refrigerator and gently reheat it on the stove or in the microwave.

Why did my soup get thicker overnight?

The wild rice continues to absorb liquid as the soup sits, and the creamy mixture also thickens. Add a little chicken broth when reheating until it reaches your desired consistency.

Can I use gluten-free oat flour?

Yes. If you need the soup to be gluten-free, use certified gluten-free oat flour and check the labels on your chicken broth and other packaged ingredients.

Can I use chicken breasts?

Yes. Boneless, skinless chicken breasts work well in this recipe. You can also use boneless, skinless chicken thighs if you prefer darker meat.
