Ingredients

1½ pounds chicken

1 cup wild rice

3 carrots, sliced

3 celery stalks, sliced

1 small onion, diced

5 cups chicken broth

1½ teaspoons Italian seasoning

1 teaspoon salt

½ teaspoon pepper

4 tablespoons butter

¼ cup oat flour, gluten free

1½ cups heavy whipping cream

Instructions

Add chicken, wild rice, carrots, celery, onion, chicken broth, Italian seasoning, salt, and pepper to a slow cooker.

    Cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is cooked through and rice is tender.

      Remove chicken and shred. Return shredded chicken to the slow cooker.

      • Melt butter in a small saucepan. Whisk in oat flour and cook for 1 minute.

      Slowly whisk in heavy whipping cream until thickened.

        Stir the cream mixture into the soup.

          Cook for another 15 minutes.

            Serve warm and enjoy!
