Sausage Breakfast Bites

Breakfast doesn't have to be hard! These simple and quick to make breakfast bites will satisfy the entire family. Not to mention they can be made ahead of time and place in the freezer for later!

Ingredients

  • 1 lb ground chicken breakfast sausage uncooked
  • 1 cup grated sweet potato using a box grater or food processor
  • 1 1/4 cup finely diced red apples such as Fuji or gala
  • 1 cup chopped baby spinach
  • 2 tbsp almond flour
  • 1 egg beaten
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp ground sage

Instructions

  • In a mixing bowl, add sausage, sweet potato, apples, and spinach and mix until evenly incorporated. Mix in the almond flour and egg, and season with salt, pepper, and ground sage. If needed, chill the mixture to make it firm. This will make it easier to form into the bites.
  • Preheat the oven to 350 degrees. Line a large rimmed baking sheet or two with parchment paper. Roll about 1 1/2 tbsp of the mixture at a time to make 1-1/4 inch balls, placing them an inch or two apart on the sheet. You should have 35 of them. Once formed, depress the balls a little with the palm of your hand to create disks on the paper. Place the pan into the oven and bake 20-25 minutes, or until golden and fully cooked, turning halfway through cooking. Allow to cool completely before freezing.
