2cupscarrotshalved lengthwise and cut into small sections
1cupgluten-free organic vegetable stock
1/4tspground sage
2sprigs fresh thyme or 1/4 tsp dried thyme
1tspdried parsley
2tsparrowroot starch
4tspwater
salt to taste
pepper to taste
1/4tspgarlic salt
Instructions
Place stew meat into slow cooker along with spices, vegetable stock and vegetables. Place on low for 6 hours or high, 4 hours.
Before serving, drain the juices out of the slow cooker into a skillet and bring to a boil. In a small dish, combine your arrowroot starch and water, then mix. When juices have come to a boil, slowly add the starch slurry to the pan, stirring frequently, until juice begins to thicken into a gravy. Pour gravy over stew and serve.
Notes
If you feel you need more juice, you can add 1/2 cup of vegetable stock to the crockpot juices to create more gravy.
