- 2 cup cooked chicken, shredded or chopped (rotisserie works great)
- 1/3 cup dairy-free mayo β I love using Primal Kitchen Avocado Oil Mayo

cup diced celery
- ΒΌ cup sliced almonds or sunflower seeds (adds crunch + healthy fats)

cup Orange, red or yellow bell pepper
- 1 whole cucumber
- 2 Tbsp. fresh dill, chopped
- Sea salt + black pepper to taste
Combine chicken, mayo, lemon juice, and seasoning in a large bowl.
Add celery, carrots, apples, and nuts or seeds. Mix well to coat.
Taste and adjust seasoning if needed.
Chill for 30 minutes (optional, but great for letting the flavors meld).
