Ingredients

  • 2 cup cooked chicken, shredded or chopped (rotisserie works great)
  • 1/3 cup dairy-free mayo β€” I love using Primal Kitchen Avocado Oil Mayo
  • β…“ cup diced celery
  • ΒΌ cup sliced almonds or sunflower seeds (adds crunch + healthy fats)
  • β…“ cup Orange, red or yellow bell pepper
  • 1 whole cucumber
  • 2 Tbsp. fresh dill, chopped
  • Sea salt + black pepper to taste

Instructions

  • Combine chicken, mayo, lemon juice, and seasoning in a large bowl.
  • Add celery, carrots, apples, and nuts or seeds. Mix well to coat.
  • Taste and adjust seasoning if needed.
  • Chill for 30 minutes (optional, but great for letting the flavors meld).
