Coconut Bites

Super versatile and easy coconut clusters!

  • Preheat oven to 350 degrees Fahrenheit.  Line a cookie sheet with parchment paper.  Place all ingredients in a large bowl and mix well.  Using a measuring tablespoon, scoop mixture and scrape along side of the bowl to pack the spoon and flatten the bottom.  Drop onto parchment lined sheet and flatten just a bit with the back of the spoon.  Bake 13-16 minutes until golden brown and firm.

Notes

*If you can't bake the entire batch at once, be sure to stir the mixture again quickly if it has sat for several minutes as the syrup and egg tend to run back down to the bottom of the bowl.
*Feel free to use whatever nuts and seeds you have on hand, most should work just fine.  I've used cashews, pecans, and walnuts. Sunflower seeds would also be a good substitute for the pumpkin seeds.  Flax seeds would sub well for the chia seeds.  Use your imagination, this is a perfect chance to get creative!  Let us know about your favorite add-ins in the comments--we'd love to hear from you!
