Place dates in blender and add water and vanilla. Blend util the dates become a paste.
Add in cashews and pulse until all is combined.
Place date dough into a small glass dish lined with plastic wrap. Completley cover the mixture and use the back of a small flat dish to press firmly down creating a square bar.
Once you've shaped the date dough mixture, flip onto a piece of parchment paper. Use your dough slicer to cut desired shape. Wrap in parchment paper and tie with twine.
Notes
Each bar is 36 carbs. Remember if you are watching blood sugar control to pair a bar with some protein. We like to drizzle some almond butter on our bars. Even though these make 10 bars , a half of bar is more than enough to satisfy that sweet tooth. Leave these on your counter or in the fridge for up to one month.
