Berry Parfait

You can't go wrong with this Berry Delicious Parfait

Ingredients

  • 3 cups vanilla yogurt vanilla or plain, my favorite is Oikos Triple Zero
  • 1 cup strawberries sliced
  • 1 cup blueberries
  • 1/2 cup pomegranate seeds
  • 4 Parfait glasses chilled
  •  

Instructions

  • PREP: Wash and thoroughly dry the fruit. If the fruit is at all wet, it affects the taste of the parfait. Remove stems from any berries and thinly slice the strawberries. Toss together all of the fruit.
  • ASSEMBLE: Layer 1/3 cup vanilla yogurt into the bottom of 4 cups. Alternate layers of fruit and then yogurt. Repeat layers until glasses are filled to the top.
  • EAT:  Parfaits don't sit or store well.

Notes

Make this dish how you like it! Just remember when it comes to fruit, your berries are the best fruit when it comes to a lower spike in blood sugar if your diabetic.
