Kale deserves a big applaud. It is one of the most trendiest vegetables right now It takes the cake when it comes to a super food that is perfect in just about any recipe you make. Why should we add kale to our diet and why is it valuable to our health?
Kale contains fiber, antioxidants, calcium.
Kale contains vitamins C and K, iron, and a wide range of other nutrients that can help prevent various health problems.
Antioxidants help the body remove unwanted toxins that result from natural processes and environmental pressures.

There is always room in the kitchen so next time your at the grocery make sure you grab some! An important note I want to make about this super food is that it can be super delicious when served raw in a salad, but you really have to massage it first. I like to pour a little olive oil over it and and use my hands to work it for about a minute until the leaves start to turn dark green. This make them less tough to eat.

Don’t skip another day without adding this Power Hour Kale Salad to you day! It’s delicious and the perfect mix of sweet from those cranberries and a bit of sour from the dressing.

Ingredients
- 1 bunch of kale
- 1 tsp olive oil
- 1/4 cup dried cranberries
- 1/4 cup chopped cashews
- 1/4 cup red onion (finely chopped)
Dressing:
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1/4 tsp garlic salt
- salt and pepper
- squeeze of fresh lemon
Instructions
- When eating kale as a raw salad make sure to massage it with olive oil for 1 minute or until leaves turn dark green. This will help to break down the kale so it is delicious to eat.
I saw your post on HPU and was curious. Kale salads sound great.
I do want to let you know how wonderful early kale is, I planted a couple of 4-foot rows and picked the very tender leaves of kale and chard when they were just 3inches tall. Something you could promote in the early spring. Later the plants get much bigger and the row can be thinned.
