Instant Pot Mexican Rice

This past Christmas, my husband bought me the gift I had been waiting for… an Instant Pot. Yes, I know I’m behind the times considering everyone in America has one (not to mention I have a food blog). I bought a pressure cooker a few years ago and absolutely love it! I honestly thought there wouldn’t be much of a difference.

In January, we closed on a new house and were starting a new journey at a new place, so my Christmas gift got packed up for the move without me ever opening it!  Two weeks ago, I was able to get it out and try it. The result???

We did a total renovation of the new house, so even though we have been staying here, I had to wait on my appliances to be delivered. I was a little worried I would have a difficult time cooking since I didn’t have a stove, but that was not the case. My Instant Pot came to the rescue and I haven’t skipped a beat when it comes to cooking my family their favorite meals.

Now to the recipe…

I don’t know how many of you love tacos, but one of the most frustrating things about taco night is trying to find the perfect Mexican rice to go with it. I found it, friends! My family devoured the entire dish. I used the Instant Pot to make it and it turned out to be better than when I use my rice cooker. Make sure to give this rice a try, you won’t be disappointed. My biggest advice in the kitchen is to take this recipe and make it your own. Don’t be afraid to add the flavors your family loves.

Instant Pot Mexican Rice

Fluffy rice with a Mexican twist

Ingredients

  • 2 cups long grain rice
  • 3 tbsp olive oil
  • 1 cup organic chicken broth
  • 3/4 cup mild or hot salsa
  • 1/4 cup white onion chopped or 1 tbsp onion powder
  • 2 garlic cloves minced
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • cilantro for garnish

Instructions

  • Set Instant Pot to saute.
  • Add oil and onion to pot. Saute, stirring continually, for 1 minute. Add garlic saute for 1 minute. Add rice, broth, salsa, and spices to the pot. Lock on the lid and set on pressure cook for 8 minutes. Make sure to lock gasket to hold in steam. After 8 minutes, manually release the steam and stir. Top with chopped cilantro.

Notes

Make sure not to let your garlic burn or it will become bitter. You can replace the onion and garlic with onion powder and garlic powder, if needed.
