12 Eggs
1/2 pd Bacon, no sugar (sliced in small pieces)
2 Sweet potatoes (diced)
1 can Black Beans (rinsed)
1/2 tsp Garlic salt
Salt & pepper (to taste)
1 tsp coconut oil
Instructions
Start by washing your fresh eggs. 2. In a cast iron skillet, heat coconut oil. 3. Dice your sweet potato and place into the skillet. Allow sweet potato to soften 4.Add your eggs and stir. 5. Place your beans in a colander and rinse. Combine the beans and seasonings to the skillet. Mix together and allow it to cook for 1 minute. 6. Next create a circle in the middle of your mixture. Place bacon in the middle and allow all ingredients to cook for 5 minutes or until bacon is cooked to consistency. (soft or crunchy) 7. Once the mixture is cooked you can serve immediately. Top with avocado, fresh tomato and parsley.
