đŸ„” Rise & Shine Power Skillet (A Gut-Friendly Farmhouse Breakfast)

November 2, 2021

Ditch the bloating and skip the heavy gravy. It’s time to fuel your mornings with something real, vibrant, and nourishing—meet my Rise & Shine Power Skillet.

Growing up in the South, Saturday morning breakfasts were a whole thing. Eggs, bacon, sausage, biscuits, gravy, and grits filled the kitchen (and our bellies). The food was comforting—but not exactly what you’d call clean or energizing.

As a mom with a child managing Type 1 diabetes and my own experience with autoimmune issues, I’ve spent the last seven years learning how food affects everything—our focus, mood, gut, and energy levels.

This easy, one-pan skillet is our family’s go-to when we want that big breakfast feeling—without the blood sugar crash, brain fog, or bloated belly. It’s packed with protein, healthy fats, fiber, and flavor. And the best part? The kids love helping make it too!

✹ What You’ll Need

Here’s the beauty of the Power Skillet—it’s flexible and full of nutrients:

  • Pasture-Raised Eggs
(Try Vital Farms Eggs or your favorite local brand)

  • Uncured Bacon (No Sugar)
(We love Applegate No Sugar Bacon)

  • Cooked Black Beans (omit for Paleo)

  • Diced Sweet Potato (great for stable energy)

  • Avocado (hello, healthy fats!)

  • Tomato

  • Minced Garlic

  • Sea Salt + Cracked Black Pepper

  • Fresh Parsley or Cilantro

🌿 Make It Paleo-Friendly

Want to keep it grain- and legume-free? No problem.

✅ Skip the black beans
✅ Add sautĂ©ed veggies like zucchini, mushrooms, or summer squash
✅ Top with homemade guacamole or Primal Kitchen Pico de Gallo

đŸŒ± Make It Vegetarian

Looking for a plant-based twist?

✅ Omit the bacon
✅ Add crispy chickpeas, seasoned tofu, or cooked lentils
✅ Keep those veggies in there for fiber and flavor!

đŸ‘©â€đŸł Can Kids Help?

Absolutely! My kiddos love joining in—cracking eggs, rinsing beans, sprinkling seasoning. Sure, the messes happen, but mama… we make them too!

Giving your children a role in the kitchen not only builds confidence but encourages them to embrace healthier choices alongside you.
