Baked Lemon & Garlic Salmon

It seems like just yesterday, as a kid, my dad would wake me up early on a Saturday morning, lunch boxes in hand, ready to spend the day together on the open water. Fishing was something my dad and I loved to do together. I remember the days, sitting in a small boat learning all the ins and outs of baiting a hook and enjoying the peaceful view, sun reflecting on the water. Those days are far, few and in between with my dad these days because he is busy passing that tradition on to my kiddos.

Fish was a huge part of our diet and the benefits are well worth it. As I became a little older, I was introduced to salmon, which has now become a staple in my diet. Salmon is packed with Omega 3 fatty acids and consuming 1 to 3 grams of Omega 3s per day is essential for good health.  It would be easy to take a pill, but why not enjoy creating something delicious in the kitchen that your whole family will love? Below is one of my favorite recipes for one of my favorite fish! Packed with flavor and vitamins, this weeknight meal is always a winner. My kids will tell you that it has become one of their favorites. Maybe you avoid it because you’re afraid your kids will frown at this unfamiliar food, but try it anyway!  You can also grab an Omega 3 supplement for you kids  (or yourself) so that your babies are still getting the proper nutrients.

The one thing that most of us lack in our everyday diets are Omega 3 fatty acids. It’s easy to overlook them, but in reality it causes some of the most irritating of symptoms. Lacking Omega 3s can cause a fatty acid deficiency. The recommended amount is 1-3 grams per day. Without this you may experience the following symptoms:

Rough or dry, bumpy skin

Dry, dull, brittle hair and dandruff

Soft, peeling, brittle nails

Excessive thirst

Difficulty sleeping

Difficulty paying attention

Mood swings

Baked Lemon & Garlic Salmon

Ingredients

  • 1 pound salmon filet
  • 1/2 pound green beans trimmed
  • 2 tablespoons ghee softened
  • 1 tbsp olive oil
  • 1 teaspoon minced garlic
  • 2 teaspoons lemon juice fresh or bottled
  • 1 tbsp stone ground mustard
  • 1 teaspoon lemon zest
  • salt and pepper to taste
  • cooking spray
  • lemon wedges for serving

Instructions

  • Preheat oven to 375 degrees. In a small bowl, mix together, garlic, lemon juice, stone ground mustard, olive oil, ghee, salt and pepper. Cover your baking sheet with parchment paper and lay salmon in the middle. Reserve some of the marinade for the beans. Coat top of salmon with the mixture and toss your beans in the remaining reserved marinade and place the beans on each side of the salmon. Cook salmon for 20 minutes and broil for 3-4 minutes to create a crunchy skin.
