I don’t know about you, but I grew up with my mom making casserole every Saturday.
As much as I love the thought of breakfast casserole, I love even more, the thought of a healthier version. One that doesn’t consist of foods that are known for inflammation and weight gain. This power packed breakfast is full of essential vitamins your body needs and craves. It’s versatile, you can smoother a fried egg, toast or even an avocado bowl.

Ingredients

- 1 sweet potato
- 4 slices bacon (choppped)
- 1 garlic clove (minced)
- 1 cup kale (chopped)
- 1 can organic black beans (drained)
- 1 tsp coconut oil
- salt and pepper
Instructions
- Cook sweet potato. Add chopped bacon to a skillet and cook until golden brown. Pour bacon in a separate bowl and drain. Add coconut oil to skillet and let melt. Add garlic, beans, mushroom and kale for 5 min, stirring frequently. Add salt and pepper. Combine bacon back into skillet and serve in a bowl on top of sweet potato or fried egg.
