Today is an exciting day for our family!!

Before I tell you why it’s a good day, let me explain why we have been bumming a lot over the last few years.

We absolutely love potatoes and rice. I think we are all in agreement that they are amazing foods, but not the best picks for everyday eating. Molly is type one diabetic and this mama is always watching carbs so we had to find a better solution for eating the things that we loved. I have to be honest, it wasn’t easy getting my husband and kiddos to jump on the cauliflower rice train, but they were pretty awesome about eating it, regardless of how they felt about it.

This past week my son asked if I could make mashed potatoes.  Sitting in the kitchen pondering whether to make them or not, I decided to try mashing my cauliflower rice. With an immersion blender, some seasoning and butter, this quick and easy dish became a hit. There wasn’t even a spoonful left to eat.

Not to mention, it goes perfect with our  Meatloaf with hidden veggies.

This calls for Celebration!! 

Just when I though potato’s won and cauliflower  lost, it came through and proved me wrong!!! Hooray  for Cauliflower!!!

I definitely want to make it clear that I am not against potatoes. We LOVE them, white potatoes, sweet potatoes, baby potatoes. We just work hard to keep the white potatoes limited and by using the cauliflower as a replacement, we are able to eat them with just about any meal.

Mashed Cauliflower

Don't miss out on this quick and simple dinner side. Cauliflower is re-inventing how we look at food.

Ingredients

  • 1 bag cauliflower rice frozen
  • 2 tbsp unsalted pasture raised butter or ">Ghee
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic salt

Instructions

  • Follow instructions on bag to cook your unopened bag of cauliflower rice in microwave.  When rice is cooked, pour in a bowl and add your butter and seasoning. Use your immersion blender to mash the rice. Blend until smooth.

Notes

If you prefer a creamer mashed cauliflower, you can add unsweetened almond milk or coconut milk to make them smoother. Start with 1 tbsp of milk and add as needed.
