Chicken Sausage & Kraut

Hey Y’all,

Let’s talk about a dinner idea that is delicious and seriously the easiest meal to throw together! I was super excited when I was shopping in Costco and ran across the Paleo Organic Chicken Sausage. The best part, they were very affordable and the whole family loved them. The flavor of the basil with the black pepper hits the spot every time I make it.

I don’t want to jump around on you, but I can’t talk about how delicious this recipe is and not mention the kraut! This past summer I started to learn about fermenting foods. Cabbage is one of the first I started with and we eat it with just about everything. Unlike the store bought kraut in a jar, this is cold with the perfect crunch and just a touch of sour. Let’s not forget about all the health benefits you gain from eating fermented kraut.

WHY SHOULD YOU EAT FERMENTED FOODS:

  1. Enhances food preservation.
  2. Boost the number of beneficial bacteria in your gut.
  3. Fermented foods are rich in probiotic bacteria
  4. Adds beneficial bacteria and enzymes to your overall intestinal flora
  5. increasing the health of your gut microbiome and digestive system and enhancing the immune system.

 

But one of the biggest benefits of fermented foods comes from probiotics. Recent research suggests that the type of gut bacteria in the bodies of Americans is changing. One possible reason is that the microbiomes in our bodies are not regularly replenished the way they were in past generations. That’s because of changes in the American diet — particularly the rise in processed foods — and because of better hygiene, which cuts down on the number of microbes people are exposed to naturally through dirt and other contaminants, according to Dr. Ludwig. In addition, antibiotics are used widely and can kill off beneficial organisms along with the bad ones.

  1. Slice chicken sausage into quarter pieces. Heat coconut oil in a skillet and add sausage. Cook until browned on both side, about 5 minutes per side. In a separate skillet pour in kraut and cook until heated all throughout.

Notes

In the book Fermented Vegetables by Kirsten and Christopher Shockey, they have a mantra, “Submerge in brine and all will be fine.”  As long as your vegetables are weighted properly and stay below the level of the brine (in a covered jar), there is a good chance all is well with your ferment and it will be delicious.  If you haven’t clicked any of the links to purchase this book yet and you’re interested in getting into fermenting, you should do it right now!  I can’t say it enough, this book is so helpful!

I’ve also added a shredded beet or two to this recipe before and it tastes great!
