I remember the first time I made stuffed peppers. All the children frowned. Even though I thought they looked amazing, and they love peppers, they just weren’t into it. That is, until they (reluctantly) took a bite. It was like their whole world changed. Who wouldn’t love beef in tomato sauce (with a few sneaky vegetable from yours truly) topped with cheese?! Crazy people, that’s who! Just kidding…kinda.
There really isn’t a whole lot more to say about these guys except they are a tasty, well-rounded, healthy dish to serve up to your family. Packed full of protein and veggies, you can’t lose! Plus, as far as dinners go, they’re pretty quick and easy. From fridge to plate they will only take up about an hour of your precious time. Grab your favorite skillet and baking dish and get started!

Stuffed Peppers
Ingredients
- 4 medium bell peppers
- 1 lb ground beef or turkey
- 1 large carrot
- 3/4 cup baby bella mushrooms diced
- 2 garlic cloves minced
- 1 tsp onion powder
- 1 tbsp parsley chopped
- Salt and pepper to taste
- 8 oz can tomato sauce
Instructions
- Bring a 5qt pot of water (filled about halfway) to a boil. Slice each bell pepper in half and clean out seeds. Place peppers in boiling water for 5 min. Once the peppers are softened, remove from water and set aside to drain.
- Preheat oven to 350 degrees Fahrenheit.
- In a large skillet, cook up ground beef or turkey and drain grease. Add tomato sauce, carrots, mushrooms, garlic, onion, parsley, salt and pepper. Mix until well combined. Place peppers in a baking dish cut side up and spoon beef mixture into each one. Bake in preheated oven for 30 minutes. Top with shredded cheese.
