Three years ago when I started Dishing Up Grace, I had two main goals in mind. With my oldest daughter having Type 1 diabetes, I wanted to make sure I was creating food that kept her blood sugar stable. That forced me to have to learn to cook without processed foods, use organic fruits and vegetables, and learn to create dishes from food in its rawest moment. The recipes I grew up using included a lot of wheat flours, white sugar, and buttermilk. It was not long after my daughter was diagnosed that I realized this way of eating was no longer going to work in our home. Here were (and are still) my goals:
Goal #1
Create eating habits that consist of organic, unprocessed, whole foods.
I remember finding different blogs that inspired me to make new, healthy meals for my family. For me, this was uncharted territory. We never had horrible eating habits, we were just used to high fat (not the good kind) fried foods and thick creamy sauces. When I started making chicken and vegetables every night, we were left feeling hungry and defeated. So, I decided to start a food blog that would consist of healthy versions of the recipes that I grew up on–stews, meatloaf, desserts, and pastas. I had to believe that taking care of my family through food didn’t have to be a struggle. I wanted to still enjoy foods that were filling and packed full of flavor. I knew I needed to make food a priority in my family.
Goal #2
Create meals that your family knows and loves using organic, unprocessed, whole foods. I wanted to share my creations with you!

If I could share anything that I have learned over the last several years, it would be that living healthy doesn’t have to be daunting. It can be easy and delicious. Paleo Chunky Stew
Ingredients
- 1 pound beef stew meat
- 1/2 medium yellow onion cut into petals
- 2 cups celery. coarsely chopped leaves, too
- 2 cups carrots halved lengthwise and cut into small sections
- 1 cup gluten-free organic vegetable stock
- 1/4 tsp ground sage
- 2 sprigs fresh thyme or 1/4 tsp dried thyme
- 1 tsp dried parsley
- 2 tsp arrowroot starch
- 4 tsp water
- salt to taste
- pepper to taste
- 1/4 tsp garlic salt
Instructions
- Place stew meat into slow cooker along with spices, vegetable stock and vegetables. Place on low for 6 hours or high, 4 hours.
- Before serving, drain the juices out of the slow cooker into a skillet and bring to a boil. In a small dish, combine your arrowroot starch and water, then mix. When juices have come to a boil, slowly add the starch slurry to the pan, stirring frequently, until juice begins to thicken into a gravy. Pour gravy over stew and serve.
