Vanilla Protein Balls

These low sugar protein balls are an easy, quick snack! Perfect for my blood sugar balanced friends!

Ingredients

Scale

1 1/2 scoops of vanilla vegan shakeology

1 1/4 cup dry rolled oats

1/3 cup smooth almond butter

4 medjool dates, chopped

1/4 cup raw cashews, chopped

1 large banana mashed

1/2 tsp pure vanilla

Instructions

  1. Combine Shakeology, oats, almond butter, and dates in food processor; pulse until dates are incorporated. (May seem dry, but that’s ok.
  2. Add cashews,  banana, and extract; pulse until just blended.
  3. Roll into 12 balls, about 1-inch in diameter each.
  4. Serve immediately, or store in a tightly covered container in the refrigerator for up to three days.
