Quick pickled onions, delicious atop smoky beans, salads, sandwiches, or straight from the jar!

1 medium onion (thinly sliced)
1 teaspoon black peppercorns
1 bay leaf
1/2 cup vinegar (I used a mix of apple cider and white vinegars)
1 teaspoon sea salt
3–4 tablespoons sugar (depending on your desired level of sweetness)
Instructions
Place onions, peppercorns, and bay leaf in a small glass bowl or jar. Set aside.
In a small saucepan, bring vinegar, sugar, and salt to a boil. Stir until sugar and salt are just dissolved, then remove from heat. Pour over onions and spices in prepared jar and let sit at room temperature for 1-2 hours. Serve and refrigerate and leftovers.
