Sausage Breakfast Bites – A sausage roll with apple, spinach And Grated Sweet Potato thrown in! These Breakfast Bites Are Perfect As A Snack Or To Make Ahead And Heat Up On The Go.
I’m typically one who doesn’t enjoy breakfast. I’m not big on eggs, I don’t eat a lot of sugar, and I think breakfast cereal tastes like cardboard. When I wake up, I will usually reach for tuna, leftovers, or even just a smoothie. However, I realize I’m the weirdo. I don’t want my daughters growing up without a love of all things breakfast! My husband loves breakfast, so on weekends, I will always try to make something good for them in the morning. If I don’t, he’s off to the local convenience store for a bag of powdered donuts!
These bites are made with almond flour instead of oats to help bind them together. The almond flour makes this the perfect recipe if your looking for whole30 or paleo breakfast recipe!

These Sausage Breakfast bites can be made ahead and placed in the freezer until ready to eat. Just pull them out and place them on a microwave safe plate and reheat for 45 seconds. When it comes to freezing my meals that I have left over or have prepped for the week or month, I always use my FOOD SAVER. It helps to keep my food fresh so that nothing is wasted!

Sausage Breakfast Bites
Breakfast doesn’t have to be hard! These simple and quick to make breakfast bites will satisfy the entire family. Not to mention they can be made ahead of time and place in the freezer for later!
Ingredients

- 1 lb ground chicken breakfast sausage (uncooked)
- 1 cup grated sweet potato (using a box grater or food processor)
- 1 1/4 cup finely diced red apples (such as Fuji or gala)
- 1 cup chopped baby spinach
- 2 tbsp almond flour
- 1 egg (beaten)
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp ground sage
Instructions
- In a mixing bowl, add sausage, sweet potato, apples, and spinach and mix until evenly incorporated. Mix in the almond flour and egg, and season with salt, pepper, and ground sage. If needed, chill the mixture to make it firm. This will make it easier to form into the bites.
- Preheat the oven to 350 degrees. Line a large rimmed baking sheet or two with parchment paper. Roll about 1 1/2 tbsp of the mixture at a time to make 1-1/4 inch balls, placing them an inch or two apart on the sheet. You should have 35 of them. Once formed, depress the balls a little with the palm of your hand to create disks on the paper. Place the pan into the oven and bake 20-25 minutes, or until golden and fully cooked, turning halfway through cooking. Allow to cool completely before freezing.
