Creamy Tomato Soup

This homemade, creamy tomato soup is gluten-free, dairy-free and one that the family will go crazy over!!

  1. Step 1 – Heat bacon grease in a pot on the stove. Add carrots, garlic, leeks and thyme. Cook while frequently stirring until carrots are softened (2 -3 minutes).  Add can of tomatoes and tomato paste and bring all ingredients to a simmer and allow to cook for 15min.
  2. Step 2 – Place soup in a mixer and puree until everything is smooth. Serve immediately.
