One of the perfect go-to side dishes! Because it pairs well with just about anything. The perfect white (or brown) rice is often an allusive side dish. It can be pasty and gross or way too al dente. Ugh, who knew rice could be so tough! But, I’ve been experimenting with my Instant Pot lately and it has completely changed my rice making game!
It wasn’t until the last few years that I discovered the trick to making the perfect white rice. I would always try to make it on the stove or in a rice cooker and for the longest time, I just couldn’t get it right. One day a friend told me a trick they use when making their rice so I thought I would try it too. Since everything I was making was in my new instant pot ( which has a rice button) I figured what could I loose.
The trick??? Oh, well it was the coconut oil. This gave amazing flavor and kept the rice from sticking to everything and each other. The instant pot rice time was perfect and the rice was so fluffy! Since that day, I haven’t made my rice any other way.

Fluffy Long Grain White Rice {Instant Pot}
The easiest recipe! This perfect basmati rice, fresh herbs, coconut oil and chicken broth for extra flavor is great for any stir-fry, side or bowl! Not to mention, it’s freezer-friendly!

Ingredients
2 cups Basmati Rice
1 container organic chicken broth, or 4 cups liquid (water or broth)
1 Tbsp coconut oil, be generous
salt
Instructions
- place your long grain rice in the instant pot.
- pour whole container of organic chicken broth in with the rice.
- add your coconut oil and salt
- Take a spoon and mix all ingredients together
- place on lid and lock
- Press the rice bottom on your instant pot and make sure the time is set for 8 minutes
- Make sure to release the pressure immediately

Notes
Just a few tips:
After all pressure is released, make sure to remove whole pot from the actual instant pot and pour rice into a different container. If you allow the rice to sit in the warm pot it will continue to cook and become mushy.
Until rice is completely cooled make sure to fluff the rice every few minutes with a fork.
