This easy pizza recipe is great for beginners and produces a crunchy, low carb  pizza crust. Skip the pizza delivery because you only need 6 basic ingredients to begin! Pizza is not a trend, it’s a way of life – anonymous

There is so much truth to this statement. A majority of Americans could go their entire lives eating pizza. Here in our house we love a good slice of cheese pizza. Sitting down with the family in front of a Tv about to watch a good movie, knowing your going to eat way to much!

Here is something you might not know. If you are someone who lives with type one or type two diabetes, pizza is one of the worse things your can eat if it’s  not made the right way. Every since my oldest daughter was diagnosed with diabetes 7 yrs ago, we quickly realized we would need to find an alternative to the pizza that we find familiar.

We have tried every pizza way of making out there! I have spent endless hours in the kitchen making Cauliflower crust, Gluten free crust, Low carb crust and I have come to find some that work really well and some that do not. When pizza dough is made there are so many factors to consider.

The problem is that every pizza is two glucose highs waiting to happen. There are fast sugars in the crust and in the sauce, and there are slow carbs in the cheeses and meats. And pizza’s challenges for the pancreatically-challenged are everywhere.

  • Pan, hand-tossed, or thin crust?
  • What toppings?
  • How generous or stingy is the cook?
  • Does one brand have more sugar in their sauce than another?
  • And what about the slices? A “slice” of pizza has a published carb count in many cases, but rarely are pizzas cut uniformly. It’s a nightmare.

So I have created a better way of enjoying a good slice of pizza! This recipe is it!

This recipe can be cooked in the oven or even in the air fryer!
