Carnitas

October 1, 2020

Every tortilla dreams of being stuffed with Carnitas. The best of the best of Mexican food, seasoned pork is slow cooked until tender before gently teasing apart with forks and pan frying to golden, crispy perfection. Pork Carnitas are that elusive combination of juicy and crispy with perfect seasoning – and this Carnitas recipe requires just 5 minutes prep!

Most people don’t know this about me, but my Auntie Rose is from Puerto Rico. Growing up we always had those special occasions where she would create a delicious, one of a kind Mexican dish. I will be the first to say the prep and attention that goes into creating an authentic Mexican dish is one to be praised. The flavors and aromas that come from the real ingredients, fresh and local, are absolutely out of this world. I’m a little ashamed, because with having a food blog she would probably be disappointed that this recipe is quick and created for the busy family. Regardless, what person doesn’t enjoy a delicious carnitas in a bowl or on a tortilla.

Carnitas is one of my favorites. I make this recipe often – for everyday purposes, a freezer standby and for taco-bar gatherings with friends!

This recipe is simple. Let’s just add all the ingredients into the slow cooker and worry no more. In 4-6 hours you will have a simple dish to serve your entire family! The best part is whatever you have left, with the right freezer bags you can freeze for up to 6 months in the freezer! In our home we love to use our food saver for everything that we freeze!

Here are some reasons I love this carnitas recipe:

✅ Extremely quick 5 minute preparation
✅ Enough flavour to eat plain (and you will pick it out of the pan!)
✅ Subtle enough flavour so it can be used in any Mexican dish
✅ Perfect caramelized brown bits while retaining the incredible juiciness from slow cooking;
✅ Perfect freezer food – reheats 100% perfectly; and
✅ Excellent food for gatherings – big batch recipe, stays fresh even hours after cooking it
