Parfaits can be enjoyed anytime during the week when it comes to a versatile healthy food idea and can be made in 10 minutes or less. (They’re perfect for a busy morning!)
A parfait is that one recipe you could eat everyday, over and over again. It’s extremely versatile! I remember when my kids were younger, every time we were out they would beg us for an ice cream or frosty from Wendy’s. I always loved taking them for a sweet treat. It was a fond memory of giggles and funny jokes while we all experienced a brain freeze, because we were eating our frozen treat way to fast. After time went by and we started to change our eating habits (remember that didn’t happen overnight) I started to realize that we would have to make those memories over something else that reminded us of our frosty days.
I have people say to me all the time, they are just kids! They should get to have treat and I shouldn’t keep my kids from experiencing that. The misconception of the western diet is that a sweet treat can only be enjoyed if it is packed full of all the ingredients that make us sick in the long run. My kids DO experience a sweet treat. The difference is that our sweet treat is made up of healthy, anti-inflammatory ingredients.
As soon as I introduced them to this Berry Parfait, the frosty was an after thought. We all realized this sweet treat could appear any time we wanted it to. Not to mention it could be created however we wanted it to be! Our favorite Parfait is vanilla yogurt with strawberry, blueberries and pomegranate seeds.

You can’t go wrong with this Berry Delicious Parfait
- Prep Time: 10 minutes
- Total Time: 10 minutes
Ingredients
- 3 cups vanilla yogurt (vanilla or plain, my favorite is Oikos Triple Zero)
- 1 cup strawberries (sliced)
- 1 cup blueberries
- 1/2 cup pomegranate seeds
- 4 Parfait glasses (chilled)
Instructions
- PREP: Wash and thoroughly dry the fruit. If the fruit is at all wet, it affects the taste of the parfait. Remove stems from any berries and thinly slice the strawberries. Toss together all of the fruit.
- ASSEMBLE: Layer 1/3 cup vanilla yogurt into the bottom of 4 cups. Alternate layers of fruit and then yogurt. Repeat layers until glasses are filled to the top.
- EAT: Parfaits don’t sit or store well.

Make this dish how you like it! Just remember when it comes to fruit, your berries are the best fruit when it comes to a lower spike in blood sugar if your diabetic.
