Try this One Pan BBQ Chicken and Potatoes for a yummy healthy family meal that is easy to make and clean up.

I think for many people, they hear Paleo and assume that whatever meal they are eating is probably  less to nothing and not mention a simple, unflavored meat and vegetable.

The big question is…

Who lives and eats like that? If you answered that question and the answer was YOU, I need to be the first to tell you that whatever your doing to get healthy and loose weight should not consist of lack of flavor, skimpy portions and feeling like you haven’t had food in days. That way of living is among a majority of our culture and it’s causing more issues that positive results. Paleo is a lifestyle that allows you to get in touch with the real flavors, real foods an real portions to help give your body the nutrients it wants and deserves.

Let’s start with this recipe. It is made up of chicken, sweet potato and bacon. You can never go wrong with those ingredients cooking together. It’s mixed in a Paleo BBQ and Hot sauce with various spices. This dish is hearty, tasty and a meal that will show you just how sustainable Paleo can be.

 

Purpose of Proteins:

  • Metabolic benefits: about 25% of the calories you eat as protein are used to digest the protein itself. For fat and carbs, that number is much lower.
  • Preserving lean tissue. Higher-protein diets preserve muscle mass during weight loss, which makes it easier to maintain weight and is also great for your health. The review didn’t touch on this, but other studies have also found that protein may help preserve bone mass during weight loss.
  • Satiety: Most people feel full faster eating a higher-protein meal than they do eating lower-protein meals higher in carbs and fat. Protein stimulates satiety hormones and there may also be a “protein drive” where your body keeps eating until it gets enough protein.

Why Sweet Potato??

  • Sweet potatoes are also rich in vitamin C and vitamin B6, which is important for brain and nervous system health.
  • A good source of potassium and magnesium, which help improve heart health by helping to regulate blood pressure.
  • Support Healthy Vision.
  • Promote Gut Health. The fiber and antioxidants in sweet potatoes are advantageous to gut health.

BBQ Chicken & Potato

Try this One Pan BBQ Chicken and Potatoes for a yummy healthy family meal that is easy to make and clean up.

Ingredients

Scale
  • 1 pack of organic chicken thighs (bonless/skinless)
  • 6 slices Bacon (chopped)
  • 2 Sweet Potato’s (chopped)
  • 3/4 cup Paleo BBQ Sauce
  • 1/4 cup Franks Hot Sauce
  • 1 Teaspoon Garlic Salt
  • Season with salt and Pepper

Instructions

  1. Go ahead and preheat oven to 400 degrees. Slice bacon strips into small chunks and place into hot skillet.
  2. Slice your chicken thighs into 1 inch chunks and place into a glass bowl.
  3. Peel and slice your sweet potato into small chunks and add to the bowl with the chicken
  4. In a small mixing bowl. combine the BBQ sauce, hot sauce, garlic salt, salt and pepper ~ Set sauce aside.
  5. When the bacon is finished cooking, remove it from the skillet and place on a paper towel to remove any extra bacon grease. Add the bacon to your chicken and sweet potato.
  6. Pour sauce mix into the bowl with the chicken, potatoes and bacon and mix until all is evenly coated.
  7. Grab a baking sheet and line it with parchment paper or silicone baking sheet.  Place your mixture on the baking sheet and spread evenly. Place in oven on top rack for 20 minutes. Make sure to stir every 10 minutes. Allow to cook 10 extra minutes on the bottom rack if potatoes are not easy to pierce with a fork.

Notes

Silicone Baking Sheets are one of my favorite things in the kitchen. If you are someone that bakes a lot they are worth the investment. The withstand the heat and are easily cleaned.
