OK, it was time for a sweet treat. It has been oddly cold here in the Midwest the last few weeks and we finally hit a brief warm-up. But, I hear it’s coming to an end very soon, like tomorrow soon. Anyway, the kiddos and I had a hankering for some ice cream, but with the whole pandemic-making-grocery-shopping-weird thing going on, we decided to improvise with what we had at home.
Bananas…check. Almond milk…check. What could we use to thicken this up? Maybe chia seeds? Check! Then I added a little almond butter for a protein boost. I put everything into my favorite blender with a little ice and it was just what we were craving! Sweet and creamy and with the bonus of being dairy-free and having no added sugar, which is a total win for my daughter’s type 1 diabetes! Plus, chia seeds are high in omega-3 fatty acids and we all know bananas are full of potassium.
We can call this healthy ice cream, right?! I totally am!

Blender Banana Ice Cream
Ingredients
- 2 frozen bananas
- 1 cup almond milk
- 2 Tbsp almond butter
- 1 Tbsp chia seeds
- 1 cup ice
Instructions
- Place all ingredients in blender and blend until smooth. Add more almond milk if the ice thickens it too much. Grab a spoon and enjoy!
