Ingredients

1 sweet potato
4 slices bacon (choppped)
1 garlic clove (minced)
1 cup kale (chopped)
1 can organic black beans (drained)
1 tsp coconut oil
salt and pepper
Instructions
Cook sweet potato. Add chopped bacon to a skillet and cook until golden brown. Pour bacon in a separate bowl and drain. Add coconut oil to skillet and let melt. Add garlic, beans, mushroom and kale for 5 min, stirring frequently. Add salt and pepper. Combine bacon back into skillet and serve in a bowl on top of sweet potato or fried egg.
