Bacon Veggie Hash

This bacon, mushroom and black bean hash will pack you full on vitamins and essentials you need to get you through the day.

  1. Cook sweet potato.  Add  chopped bacon to a skillet and cook until golden brown. Pour bacon in a separate bowl and drain. Add coconut oil to skillet and let melt.  Add garlic, beans, mushroom and kale for 5 min, stirring frequently. Add salt and pepper. Combine bacon back into skillet and serve in a bowl on top of sweet potato or fried egg.
