Acorn Squash Breakfast Bowl

Take your acorn squash and cut it in half, clean it out. I like to drizzle a little olive oil over the top and place it upside down in a casserole dish. Place a little bit of water in the dish to help steam it. Place oven on 350 degrees for 1 hour or until tender.

  1. While that cooks, place eggs in a skillet with a tsp of coconut oil and scramble. When eggs are almost cooked add the spinach and stir until it softens. When acorn squash is done cooking  fill it with the egg mixture and top with red pepper flakes. Drizzle with maple syrup.
